Ingredients For ghoulish empanads

  • 1 pkg
    refrigerated pie crust
  • 2
    egg yolks, beaten
  • green food coloring (preferably the paste)
  • FILLING:
  • 1-1/2 lb
    sweet potatoes (or yams..the orange ones)
  • 1 Tbsp
    butter softened
  • 1/4 tsp
    ground cumin
  • salt and pepper to taste

How To Make ghoulish empanads

  • 1
    peel, cook and puree sweet potatoes
  • 2
    combine pureed potatoes with butter, cumin and salt and pepper
  • 3
    Preheat oven to 450 while you assemble empanadas
  • 4
    unfold pie crust onto a floured board, using a 3" biscuit cutter cut 20-25 circles
  • 5
    scoop a tsp of filling into the center of each circle, fold over to a half moon shape, seal well with a fork or your fingers
  • 6
    combine egg and food coloring and brush onto empanadas
  • 7
    bake 10-12 minutes until crisp and cooked through. You could put a dipping sauce with this if you want, maybe a warm "blood" marinara or a garlic butter??
