Having grown up in the South, cornbread was a staple. To me, this recipe is a lighter version.

To spice it up a bit, add shredded extra sharp cheddar cheese and diced jalapeno peppers.

Ingredients

1 c
self-rising cornmeal

eggs, slightly beaten
1/2 c
vegetable oil
1 can(s)
cream-style corn (8 ounces)
1 c
sour cream

Directions Step-By-Step

Preheat oven to 425 degrees. Heat cast iron skillet in oven for about 5-7 minutes.

Mix cornmeal, eggs, vegetable oil and corn in medium bowl. FOLD IN sour cream.

Remove skillet from oven and spray well with non-stick cooking spray. Add batter and cook for about 30 minutes or until golden brown.
