Ingredients

1 large bread
4 oz goat cheese
1 large red bell pepper
SPICY MINT SPREAD
2 medium jalapeno peppers
1/2 bunch mint, fresh
1/4 tsp salt
1 medium onion
1/2 tsp lemon juice
1 tsp olive oil

Neela's Notes:

Our good friend and neighbor gave 2 nice loaves of bread and some red bell peppers/capsicums, i made this veg.sandwich based on a sandwich we had in a coffee shop, that had grilled capsicum/bell pepper, grilled cheese, chicken and pesto in it. I used spicy mint chutney, grilled capsicum and grilled cheese

 

Directions

To make mint spread: Chop onion, jalapeno peppers and mint leaves.
Heat oil in a pan and the chopped onion, jalapeno's and mint leaves till the raw smell no longer remain.
Grind it into a fine paste.
Add salt and lemon juice and keep it aside.

Quarter the red bell pepper, take off the seeds and rub oil on both sides.

Heat a non stick pan (med/high), place the red pepper pieces on it, turn it over after it gets brown (or wrap it in a foil and grill it)

Remove it from the pan when it gets soft yet firm. Remove the peel and keep it aside.

Bread :Cut the bread into half, Toast both half of the bread in a pan or in an oven.
Spread half the mint chutney to the cut sides of the bread.

Cheese: Cut the cheese into 4 slices. Heat a non stick pan, arrange the cheese slices on it and cover with lid. Remove it after 2-3 mins or when it becomes soft or (place the cheese slices on the bread slice and grill it till the cheese becomes soft)

Sandwich: Arrange the grilled bell peppers over the bread. spread it with the mint spread, place the grilled cheese over it, spread the remaining mint spread over the cheese.

Cut the sandwich into 4 equal pieces or desired portions.

It's delish. I think I'll try the cream cheese next time. I love easy recipes cause I have MS and the easy stuff just makes my day.
