My friend/neighbor shared this recipe with me a very long time ago and I have been making it since. I love it so much that I have had it for breakfast when it was leftover.

Ingredients

1/2 c
melted marg.
3/4 c
green peppers chopped
1/3 c
onion chopped

17 oz. can corn (do not drain)

1 17 oz. cream corn

beaten eggs

8 1/2 oz. corn muffin mix
1 c
shredded cheese

Directions Step-By-Step

Mix all ingredients together and add to an 8x8 greased baking dish. Bake 350 for 1 hour. That's it. Enjoy!
