- eggs, separated
- 1 1/2 c
- 1 tsp
- baking soda ( stir into the buttermilk)
- 1 3/4 c
- all purpose flour
- 2 tsp
- baking powder
- 1/2 tsp
- 1/2 c
- melted crisco
1Combine the egg yolks, and the buttermilk/soda mixture. Sometimes I added a tsp orange zest. In another bowl, combine the flour, baking powder and salt. Mix well.
Then add the melted Crisco and the dry ingredients to the wet mixture. Stir until mixed.
2Whip the egg whites till they hold their peaks well. Gently fold into the batter.
Bake on waffle iron. With this batter it is easy to tell when the waffle is done, as the batter raises the top half of the waffle iron and slowly lets it back down as it is baked.
