I received this recipe from a tomato stand at my local farmers market.

Ingredients

4
loaves day-old bread
6 to 8 medium
tomatoes, peeled
salt, pepper, and red pepper to taste
mayonnaise
1
onion, grated with juice

Step-By-Step

1Current bread with a biscuit cutter into 72 rounds.
2Slice tomatoes thinly.
3Place slices on double sheets of paper towels to drain.
4Salt and pepper the tomato slices.
5Spread mayonnaise on the bread rounds.
6Place well-drained tomato slices on half of the rounds.
7Sprinkle half a teaspoon of onion with juice over each tomato.
8Top with remaining bread rounds.
9To store until serving time, place on cookie sheet with wax paper between layers.
10Cover tightly and store in the refrigerator.
