My mother made a lot of corn bread it was the thin kind I make it that way too but I have added a little jack cheese.

Ingredients

1/2 c
yellow cornmeal
1/2 c
all purpose flour
1/4 c
sugar
1 1/2 Tbsp
baking powder
1/4 tsp
salt
1/2 tsp
pepper
1 large
egg
2/3 c
whole milk
4 Tbsp
butter
1/2 c
pepper jack cheese
pinch
shortening

Step-By-Step

1Pre-heat oven 425 degrees, rub a cast iron pan with a little shortening . Place butter in pan and put in oven to melt
2WISK ALL DRY INGREDIENTS TO COMBINE EXCEPT PEPPER
3ADD THE REST OF INGREDIENTS PLUS MELTED BUTTER FROM PAN STIR TILL COMBINED, POUR EVENLY INTO PAN. Sprinkle with pepper over top.
4BAKE 12-14 MINUTES.
