This is my husbands favorite corn bread - when ever they have a cookout at work he always has me whip up a batch.

Ingredients For jalapeno cheese corn bread

1/2 cfine corn meal
-
1/2 ccorn flour (goya brand masarepa)

1 call purpose flour
-
2/3 csugar
-
1 Tbspbaking powder
-
1/2 tspsalt
-
1/3 coil
-
3 Tbspbutter, melted
-
2 lgeggs, beaten
-
1 1/4 cmilk
-
3 lgjalapeno peppers, sliced
-
1/2 ccorn, cooked and cooled

1 1/2 ccheddar cheese, shredded- reserve 3/4 cup
How To Make jalapeno cheese corn bread

1Add dry ingredients to a bowl and make a well in the center.

2Gently whisk in the wet ingredients and stir just until mixed. Batter will be runny.

3Stir in jalapenos, corn and half th cheddar cheese.

4Bake in a sprayed 8 x 8 pan at 350 degrees for 35 minutes.

5Top with te reserved cheese and broil until melted and bubbly.

6Note - Doubles perfectly for a 9 x 13 pan.
