Sometimes you just need something quick and easy for lunch or dinner.

I used ingredients I already had, and lunch was ready in about 15 minutes.

Ingredients

2 tsp
vegetable oil
1/2 c
sliced red onion
1/2 c
green bell pepper, chopped
1/4 tsp
oregano, dried
1/8 tsp
garlic powder
1
tomato sliced
1/2 c
shredded mozzarella cheese
1
flour tortilla

Step-By-Step

1Pre-heat oven to 400 degrees

2Heat oil in skillet, saute onion and green pepper until tender, about 5 minutes.

3Place tortilla on an ungreased baking sheet. Top with onion mixture, oregano, garlic powder, tomato slices and mozzarella cheese. Bake for 8-10 minutes until cheese is melted. Keep an eye on it so it doesn't burn. Enjoy!

4NOTE: this recipe is easily doubled, or tripled, to make as many tortilla pizzas as you need.
