Ingredients
| 2-1/2 c | warm milk.....about 110 temperature |
| 1 tsp | sugar |
| 2 tsp | active dry yeast |
| 2-2/3 c | all-purpose flour |
| 1 tsp | salt |
| 1-1/2 tsp | baking soda |

Directions
Mix 1 cup of the warm milk, and all the sugar into a small bowl.
Sprinkle yeast on top of the warm milk
and let set for 10 minutes.
While you are waiting,mix flour,salt,and baking soda in a medium size bowl.
Add the yeast mixture and the remaing 1-1/2 cups of the warm milk to the flour mixture and stir to combine.
This will be a thick liquid.
Cover the bowl and put in a warm place for
about 1 hour.Heat a non-stick skillet or a griddle
to a med-low heat.
Butter the insides of your crumpet rings and place them on the skillet.
Fill up each crumpet ring only 1/2 way up. COOK.
After about 3-4 minutes you should be able to remove the rings with metal tongs.
Leaving crumpets in the skillet.
If you wait longer the crumpets will
stick & cling to the rings.
After about 4-5 minutes, when the tops have hardened a bit...it is time to flip them over and cook them another minute.
The crumpets will have bubbles forming on top.
Picture #2 is the tuna can rings I tried to use for crumpets.
This was a wrong decision..putting the batter, 1/2 way up the tuna fish rings made them to thick
and the insides did not cook.
When I tried to remove the rings, all the dough stuck to the rings.
End result.
I will buy crumpet rings,or have crumpet pancakes!
Oh well...live and learn....LOL !!
Nancy...3/14/13You can serve them immediatly,
with jam,honey,or butter.
Or cool for later and toast before serving.
Picture #3 is my attempt of crumpets
cooked with-out the metal rings.
They still tast good..but not a perfect circle.

Oooooh! I LOVE crumpets! And I can never find them in stores!! I WILL have to try this! Thanks so much for sharing this!And I think yours look GREAT!!! Like I always say, if they look "too perfect" they lose character and people think you didn't really make 'em!! ;) :D They're gorgeous! :D ;)

Nancy, I have many black walnut trees! I will gladly collect some more for you this Fall. :)
Crumpets... yes, I have made them! The rings are simply little metal well, rings! King Arthur Flour has them for 10 bucks. I havent made crumpets in years. They are easy and like a little bit flatter english muffin. :) They are good! Interesting about the tuna cans not working. Glad you tried it and reported the results! :)
The rings are also good to make english muffins, the fat Cousin of the crumpets.....lol

OK, I'll admit that me and my hillbilly self, has not ever had a CRUMPET or even seen any. What is it with the rings??? Are they basicly a round cookie cutter??? Why wouldn't the tuna cans work or I guess I should ask, why didn't the tuna cans work???

Billie...Look at picture 2..They arte tuna can rims..
If you fill them 1/2 WAY..THER TO HIGH..AND TO COOK TILL DONE..THE INSIDE IS UNDONE.
aLSO `THEY DO NOTY HAVE THE SMOOTH INSIDE THAT YOU NEED,
.i DO NOT KNOW IF COOKIE CUTERS WOULD WORK'i USE A GLASS FOR MY BIQUITS!
but MY DCEAR DAUGHTER...tHEY TASTE SO GOOD..i LOVE THE LITTLE HOLES..AND i LIOKE TO FILL THEM UP WITH ..butter!!!..lol

For those who are curious, crumpets are much like an english muffin. They are a bit more delicate and flatter then the english muffin.
Really really good! And some would say, they are similar to a griddle cake.
In Australia, they are in the stores ready to toast and eat.
It is a yeast dough and they are delectable!!!
Nancy has this recipe down pat!
With or without the little metal forms, they taste just as good. No "rings" or "forms" are needed to make this recipe..... they are just that good. :)
Just drop them into the pan, as Nancy did, and you will be pleasantly surprised as to just how good they are!
