Ingredients

2 c cornmeal
1/2 c self rising flour
1-2 c buttermilk
1 eggs
1/2 c cooking oil
1/2 -1 c honey (optional) if you want sweet cornbread
1/2 tsp salt (optional)

Kathy's Notes:

My mom taught me years ago how to make cornbread, I have never thought about a recipe until someone was in need of one, so here is my cornbread recipe and I will add an option to it for sweet corn bread. Thanks Joan :) Photo will be provided by Joan Klimkowski

 

Directions

Preheat oven to 400. Use an iron skillet or muffin pan.

In a mixing bowl add cornmeal, flour, egg and oil. Start adding buttermilk until you get it the consistency that you want ( I make mine just a little thicker than pancake batter). Pour batter into a well greased iron skillet or well sprayed muffin pan.

Bake 12-15 minutes until golden brown. Brush with melted butter when you remove from oven. If you want sweet honey you c an add the honey. Or oh heck just drizzle over a hot piece after it's done :)

I really liked this corn bread alot, it was a great texture and taste.I will make them again but since I like sweet corn bread I will be adding honey about a 1/2 a cup,I added a 1/4 cup this time and still had the bitterness that I don't care for.Still I liked this corn bread for its texture and taste.

thanks Joan, I will see if it will let me do it,, it looks good,, and I may try it with the honey,, just to see, I just know I don't like the packaged sweet cornbread

I made this recipe again last night, still good I just need to get the right adjustment on the honey,I used a 1/2 cup and that was to much also husband got white corn meal this time and I am not to sure how I feel about that. Still Kathy I really like this recipe it is as easy as the box mix to put together and the texture is perfect, they taste real good with wrong amounts of honey so when I finally make them right I am sure they will be awesome.
