My mom taught me years ago how to make cornbread, I have never thought about a recipe until someone was in need of one, so here is my cornbread recipe and I will add an option to it for sweet corn bread. Thanks Joan :) Photo will be provided by Joan Klimkowski


2 c
1/2 c
self rising flour
1-2 c
1/2 c
cooking oil
1/2 -1 c
honey (optional) if you want sweet cornbread
1/2 tsp
salt (optional)

Directions Step-By-Step

Preheat oven to 400. Use an iron skillet or muffin pan.
In a mixing bowl add cornmeal, flour, egg and oil. Start adding buttermilk until you get it the consistency that you want ( I make mine just a little thicker than pancake batter). Pour batter into a well greased iron skillet or well sprayed muffin pan.
Bake 12-15 minutes until golden brown. Brush with melted butter when you remove from oven. If you want sweet honey you c an add the honey. Or oh heck just drizzle over a hot piece after it's done :)

Cathy, the cheesy mexican cornbread sounds good, I do not make sweet cornbread but added that option for a friend, so of course it is up to you :) glad you liked it

I used your recipe last night and it was so good. Although, I did not use honey and I added 1 can of green chiles and some 4-cheese mexican cheese to it. It was out of this world!! Thanks Kathy so much for sharing! It was so easy and quick to make and much cheaper. I'll definately keep this one around.

Joan, I know that sometimes is just the wrong time to say something but well my mouth got the best of me Monday night. As you know Joe's mawmaw passed away, we were at his mom's house Monday and 3 of his aunts ( his dad's sisters) had fixed dinner to bring down, the cornbread that one had made looked pretty, after the 2nd time I choked on it because it was so dry I blurted out "OMG you would think that as old as she is she could make cornbread" I thought maybe Joe was the only one that heard me,, nope everyone was looking at me,, thankfully his aunt had already left lol,, sometimes I need to just shut up,,, your muffins look awesome btw,,ok so 1/4 c not enough 1/2 to much,, you will find a happy medium :)

I made this recipe again last night, still good I just need to get the right adjustment on the honey,I used a 1/2 cup and that was to much also husband got white corn meal this time and I am not to sure how I feel about that. Still Kathy I really like this recipe it is as easy as the box mix to put together and the texture is perfect, they taste real good with wrong amounts of honey so when I finally make them right I am sure they will be awesome.
