banana-nut bread

When my bananas are too ripe to eat I put them in the freezer and use them for banana nut bread. Usually 2 bananas will equal one cup. No need to mash the bananas.

  • 1/3 c
    shortening
  • 1/2 c
    sugar
  • 2
    eggs
  • 1 3/4 c
    flour
  • 1 tsp
    baking-powder
  • 1/2 tsp
    soda
  • 1/2 tsp
    salt
  • 1 c
    mashed ripe banans
  • 1/2 c
    chopped walnuts

How To Make banana-nut bread

  • 1
    Cream together shortening and sugar; add eggs and beat well. Sift together dry ingredients; add to creamed mixture alternately with banana, blending well after each addition. Stir in nuts. Pour into well-greased 8x8-inch pan. Bake in moderate oven (350 degrees) 40 to 45 minutes till done.
