Ingredients

APPLE TOPPING

2 Tbsp
butter
1 lb
apples, peeled, cored and sliced 1/2" thick
1 Tbsp
lemon juice
1/4 c
brown sugar

BUTTERMILK PANCAKE BATTER

1 1/2 c
clour
2 Tbsp
brown sugar
1 tsp
baking powder
1 dash(es)
salt
1/2 tsp
ground cinnamon
1/4 tsp
baking soda
1 c
buttermilk
1
egg
1/4 c
milk

Directions Step-By-Step

APPLE TOPPING:
Heat butter in large cast iron skillet over medium heat. Add apples, lemon juice and brown sugar. Cook stirring until crisp tender. About 5 minutes. Set aside off burner.

PANCAKE:
Combine milk, egg and buttermilk in medium bowl. Whisk in dry ingredients. Stir until well blended.

Spoon pancake mixture on top of apples in skillet spreading evenly to side of skillet.

Bake at 375 degrees for 20 - 25 minutes or until set and golden on top and wooden toothpick inserted in center come out clean

Let set 5 minutes. Loosen sides with spatula.

Invert on serving platter. Garnish with whipped cream if desired.

HINT: Sometimes I substitute a can of apple pie filling for the apples mixture. If doing this, pour pie filling into buttered skillet and proceed with pancake directions.
