1Pre-heat oven to 325. In a medium size bowl, cream shortening, sugar, and egg. Combine dry ingredients; add to creamed mixture alternately with milk and vanilla.
2You can use with a non-stick muffin pan, or paper cups. I prefer the paper cups.
Bake for 20-25 min or til golden brown.
3If you are looking for a healthy breakfast or a lite snack. You can take a paring knife and cut the center of the muffin out. Than get yogurt any kind you like and out 2 tablespoon of yogurt in the center of the muffin. What I did I took a fresh Banana and cut into the little slices and placed them in a circle with the yogurt and then either a Blueberry, Blackberry, or Raspberry whichever you like in the center of the Bananas on the yogurt and sprinkled a little cinnamon/sugar mixture on top. This Picture shown is my berry mix blueberry/raspberry muffins with Fat-Free French Vanilla yogurt and blueberries with the cinnamon/sugar on top. The center portion that was cut out you can sprinkle cinnamon on it leave as is.
