These are good to whip up for dinner,especially good with beef. Sometimes I add 1/2 c grated sharp cheddar cheese.

Ingredients For sweet onion muffins

1 1/2 c flour

1/2 c sugar

1 1/2 t. baking powder

1/2 t. salt

2 eggs
-
1 c finely chopped onions

1/2 c butter,melted
How To Make sweet onion muffins

1Preheat oven to 400 degrees. Combine dry ingredients. Beat eggs onion and butter till blended. Stir in to dry ingredients just until moistened. Fill greased paper lined mini muffin pans. Bake 10-12 minutes.
