Simple Almond Flour Muffins

I found this on a diabetic website. They are simple and quick to make. I often add allspice, cloves (1/4 tsp each) , and cinnamon (1 tsp) for a little more flavor. The basic muffin is great and with a such a low carb count (4.4 grams per muffin) and 75 calories per muffin. I can afford to add preserves or fruit and cream cheese for a tasty treat.

Ingredients

1 c
almond flour
1/2 tsp
baking soda
3
eggs
1/4 c
almond milk
2 Tbsp
honey
1 tsp
lemon juice

Step-By-Step

1Preheat oven to 350 degrees and line cupcake pan with paper liners. Lightly spray liners with non-stick cooking spray.
2Combine all ingredients.
3Fill each liner almost halfway full.
4Bake for 14-17 minutes. To check to see if they are done, slightly jiggle the pan.
