peanut butter & jelly muffins

I got this off of a bag of flour. They are fluffy and delicious!! You can customize them as well by adding marshmallow or chocolate chips in with them. You can also put whatever kind of jam or jelly it is that you like!!

Ingredients For peanut butter & jelly muffins

  • 2 c
    all purpose flour
  • 1 1/2 tsp
    salt
  • 1 Tbsp
    baking powder
  • 1 c
    milk
  • 2 lg
    eggs
  • 2/3 c
    sugar
  • 1 c
    peanut butter
  • 1/3 c
    vegetable or canola oil
  • jelly

How To Make peanut butter & jelly muffins

    Preheat oven to 375* and grease your muffin pan with a no stick spray or some canola/vegetable oil.

    Stir together flour, salt and baking powder. Add the milk, eggs, sugar, peanut butter and oil to the bowl. Combine the ingredients using a low speed on an electric mixer until moistened. *Do not over beat*

    Fill each muffin cup half way with the batter mix.

    Place 2 teaspoons of jelly on top of the muffin batter. You should be able to gently press the jelly into the peanut butter mix, so that the mix cradles the jelly.

    Use the rest of the batter to cover the jelly on all of the muffins. I make sure to cover right over to the edges on each muffin cup. Sprinkle some sugar on the top.

    Bake for 18-20 minutes and let rest when done. **The jelly inside will still be really hot if you eat it within 5 minutes of cooling. So bite carefully!!**
