I FOUND THIS YUMMY MUFFIN RECIPE THAT THE WHOLE FAMILY WILL ENJOY. IT IS A COBBLER MADE INTO A MUFFIN INSTEAD OF A CASSEROLE SO GIVE IT A TRY AND TELL ME WHAT YOU THINK.

Ingredients For peach cobbler muffins

  • 2 c
    all purpose flour
  • 3/4 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    sea salt
  • 1/2 tsp
    ground cinn.
  • 3/4 c
    sugar
  • 1 c
    buttermilk
  • 5 Tbsp
    veggie oil
  • 1 lg
    egg
  • 3/4 tsp
    vanilla extract
  • 1/2 tsp
    almond extract
  • 11/2 c
    unthawed frozen peaches
  • 5 tsp
    sugar for sprinkling

How To Make peach cobbler muffins

    Position a rack in the lower third of the oven and preheat the oven to 350*. Lightly spray a 12 large muffin cups with veggie oil spray or line them with paper muffin cups.

    In a large mixing bowl, whis together the flour, baking powder and baking soda,salt,cinn, sugar.

    In another bowl, whisk together the buttermilk,oil egg,vanilla,almond extract.Pour the wet ingredients over the dry ingredients and mix just until combined. Gently fold in the peaches, using as few strokes as possible; be careful not to overmix.

    With a large ice cream scoop or spoon, scoop the batter into the prepared muffin cups,filling them approx. two thirds full. Sprinkle the tops with sugar.

    Bake for 25 to 30 minutes, until the muffins are golden brown.The tops should be firm to the touch and a toothpick inserted in the center of a muffin should come out clean. Remove from the oven and let cool for 10 minutes...
