My Mother, Mary Alice, made up this recipe when she was in her 80's! She always made an extra batch when she knew I was coming to visit or when she visited me, because she knew how much I liked them. She lived to be 96 years old. I still make them for breakfast...especially when the weather changes to cool mornings at the beginning of fall in the South.

Ingredients For mother mary's muffins

  • 1/3 c
    canola oil
  • 2 c
    oats, uncooked*
  • 1 c
    plain flour
  • 1
    egg
  • 1/2 c
    brown sugar, firmly packed
  • 1/2 tsp
    baking soda
  • 2 tsp
    baking powder
  • 1/2 c
    applesauce, unsweetened
  • 1/3 c
    molasses or any thick syrup
  • 1/4 c
    milk, whole or skim
  • 1 tsp
    vanilla extract
  • spices to taste*

How To Make mother mary's muffins

  • 1
    Spray with cooking oil a 12 muffin tin and a 6 muffin tin. Fill with muffin batter. Bake at 350 degrees for 25 to 30 minutes.

    *Note: I use instant oatmeal packets which already contain the spices so I do not add any spices to the batter.
