Moms special blueberry muffins.

What makes them special? The mashed berries added to the batter. It makes these muffins extra moist. Yum!

Ingredients

1-`1/4 c
plus 2 tbsp sugar, divided
1 stick
softened butter
2 large
eggs
1 c
plus 1 tbsp flour
1 c
whole wheat flour
2 tsp
baking powder
1/2 c
1% milk
1 tsp
vanilla
1
12 oz pkg frozen wild blueberries

Step-By-Step

1Heat oven to 375. Spray a muffin pan w/ cooking spray or use liners. In lg bowl, w/ mixer, Beat 1-1/4 cups sugar and butter until creamy. Add eggs, one at a time. Add both flours, but not the 1 tbsp of flour, and baking powder.
2Beat well. Add milk and vanilla. Mash 1/2 cup berries and stir into batter. In bowl, toss remaining berries w/ 1 tbsp flour. Gently fold berries into batter.
3Spoon batter into muffin cups. Sprinkle w/ remaining sugar. Bake 25-30 mins, or until a toothpick inserted in center comes out clean.
