Ingredients

DRY INGREDIENTS

2 c
all purpose flour
1/2 c
brown sugar, firmly packed
1/2 tsp
ground ginger
1 1/2 tsp
ground cinnamon
1 tsp
salt
2 tsp
baking powder
1 tsp
baking soda

WET INGREDIENTS

2 large
eggs (well beaten)
1 Tbsp
lemon juice
zest of one lemon
1 c
apple sauce
4 Tbsp
melted butter or margarine
1 c
mincemeat

OPTIONAL INGREDIENTS

1/2 c
pecans (chopped)
1/2 c
craisins (dried cranberries) (chopped)

Step-By-Step

1Preheat oven to 400 degrees.

2Mix together dry ingredients in large bowl. Set aside.

3Beat the eggs well. Beat in all remaining wet ingredients.

4Stir the wet ingredients into the dry ingredients (don't over stir).

5Put batter into cupcake liners in cupcake pan.

Bake 18 - 28 minutes (depending on size of muffins and your oven).

6Check doneness by inserting a toothpick, if it comes out clean it is done.
