Ingredients For maui muffins

1 crolled oats, regular or quick

1 cbuttermilk
-
1 call-purpose flour
-
1/4 tspsalt
-
1/2 tspbaking soda
-
1 1/2 tspbaking powder
-
1/2 cmelted butter or margarine
-
1/2 cbrown sugar, not packed
-
1egg
-
3/4 cshredded coconut
-
1/4 ccrushed pineapple, drained
-
1/3 cchopped macadamia nuts
- BROWN SUGAR TOPPING:

1/4 call-purpose flour
-
2 Tbsprolled oats
-
1/4 cbrown sugar
-
3 Tbspbutter or margarine
-
1/4 tspcinnamon, optional
How To Make maui muffins

1Combine oats and buttermilk in a bowl. In a separate bowl combine flour, salt, baking soda and powder. Blend with a metal whisk.

2Stir the melted butter, brown sugar, egg, coconut, pineapple and nuts together. Stir into the oat mixture. Add the dry ingredients and stir until moistened.

3Spoon batter into greased muffin cups. In a separate bowl combine topping ingredients and mix until crumbly. Sprinkle over the muffins.

4Bake for 20 minutes at 400 degrees. Let the muffins sit for a few minutes before removing onto rack. Serve muffins while still warm.
