Ingredients For jumbo pumpkin pecan muffins

2 1/2 call purpose flour

1/2 cgranulated sugar

1/4 cbrown sugar, firmly packed

2 tsppumpkin pie spice

1 tspbaking powder
-
1 tspbaking soda
-
1/2 tspsalt
-
2eggs
-
1 cpumpkin, canned (not pie mix)

1/2 cbuttermilk
-
1/4 cvegetable oil
-
1 tspvanilla

1/2 cchopped pecans
- TOPPING

1/3 cbrown sugar, firmly packed

1/3 cfinely chopped pecans

1/4 call purpose flour

1/4 ccold butter
How To Make jumbo pumpkin pecan muffins

1Combine first 7 ingredients. In another bowl, whisk eggs, pumpkin, buttermilk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in pecans.

2In small bowl combine topping ingredients. Cut in butter.

3Prepare a 12 ct muffin tin with Pam. Fill each cup wit 2/3 of batter. Top each with topping.

4Bake at 350F for 20-25 minutes or until wooden pick comes out clean. Cool for 5 minutes and then turn onto a baking rack to cool.
