In a small bowl lightly beat eggs;add milk,butter &lemon peel....Pour into dry ingredients & stir just until moistened....Spoon 1/2 of batter into 12 greased muffin cups....Make a well in the center of each.Add jam....Spoon remaining batter over jam.
Bake 400 degrees...20-25 min. or until golden brown.
