Ingredients

2 c fiber one honey clusters cereal
1 3/4 c flour
1 tsp fresh ground flaxseed
2 tsp baking soda
1/2 tsp salt
1 lg egg
1 lg egg yolk
3/4 c light brown sugar, packed
2 Tbsp honey
1 tsp vanilla
6 Tbsp margarine or butter, melted
1 3/4 c plain yogurt (or plain greek yogurt)
1 apple, peeled,cored and diced (i like fuji)
TOPPING: (IF DESIRED)
1/2 c fiber one honey clusters cereal, crushed
1 tsp margarine or butter

Teresa's Notes:

This muffin smells like Heaven when it's baking! The sweet honey taste comes through and blends beautifully with the apple pieces. Soft and moist this is a great way to sneak some fiber in on the kids, and they'll love the sweet honey flavor!

 

Directions

Preheat oven to 400 degrees F. Coat a muffin pan with nonstick spray (or line with paper liners.)

Crush cereal to fine in either a food processor or by hand with a rolling pin (put cereal in a ziploc first.)Place in a large bowl; add flour, baking soda, and salt. Blend well. Set aside.

In a separate large bowl, whisk egg and egg yolk until well blended but not frothy. Stir in brown sugar, honey and vanilla. Stir in yogurt until combined. Fold in cereal/flour mixture and apples just until combined.

Spoon batter into prepared muffin cups all the way to the top.

OPTIONAL TOPPING:
Crush cereal just enough so it doesn't resemble a cereal anymore. Blend in butter well so it all begins to clump. If desired, mix together topping and place a little on each muffin pressing it in with your fingers.

Bake in preheated oven for 15-25 minutes (depends on size of muffin) or until a deep golden brown and toothpick tests done. Transfer to a wire rack to cool.

Beautiful...makes me want to dive thru the screen...sounds yummy too. Just one caution: Fiber One was a sponsor of our in the Allrecipes program I was in. It contains Splenda, but only lists it in the ingredients and not on the front of the box..so if someone has alergies to it, or if u don't like using it...you may want to use a different cereal.
