Ingredients For ginger muffins

  • 3/4 c
    butter
  • 1 c
    sugar
  • 1 c
    molasses
  • 3
    eggs
  • 1 c
    buttermilk
  • 3 c
    flour
  • 2 tsp
    ginger
  • 1/2 tsp
    salt
  • 2 tsp
    baking soda
  • 2 tsp
    baking powder

How To Make ginger muffins

    Heat the oven to 350°F Grease a 12 hole muffin tin.

    Sift the flour, sugar, baking powder, soda and spices (ginger, salt) into a mixing bowl. Beat together the eggs, molasses, milk and butter until smooth. Stir into the dry ingredients.

    Divide between the muffin tins and bake for 20-25 minutes until golden and a skewer inserted into the center comes out clean.

    Leave in the tins for 10 minutes then place on a wire rack to cool. Sift a little confectioners’ (icing) sugar over the muffins just before serving.
