These muffins are unbelievably good still hot from the oven and the butter melting beautifully. You won’t be unhappy with the fully cooled muffins either. These are made with natural wheat bran and are much lower in fat and sugar that the bran muffins sold at the fast food and donut places and are loaded with fat and sugar. These muffins are actually good for you as well as being just plain delicious.

Ingredients For daybreak muffins

  • 1 1/2 c
    natural wheat bran (not cereal)
  • 1 c
    unbleached flour
  • 1 c
    carrot, grated
  • 1/2 c
    brown sugar, packed or 1/4 cup splenda brown
  • 1/2 c
    raisins or other dried fruit
  • 1 1/2 tsp
    baking powder
  • 1 1/2 tsp
    cinnamon
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    mace
  • 1/4 tsp
    ginger
  • 1/4 tsp
    salt
  • 1 c
    plain low fat yogurt
  • 1/4 c
    honey
  • 1/4 c
    canola oil
  • 1 lg
    egg

How To Make daybreak muffins

    Preheat oven to 375F and grease the cups of the muffin pans.

    Combine bran, flour, carrots, brown sugar, raisins, baking powder, cinnamon, baking soda, mace, ginger and salt in a large bowl.

    Whisk yogurt, honey, oil and egg in a separate bowl. Add these ingredients to flour mixture. Stir well to combine, batter will be thick.

    Place batter into prepared pan. Bake in preheated oven 18 – 22 mins or until a toothpick inserted into center comes out clean.

    NOTE: This recipe can also be made into bars. Just put the batter into a 9” x 13” baking pan that is greased or lined with parchment paper. Bake 20 – 25 mins.
