Cypress Inn Muffins

These amazing little muffins come from a Tuscaloosa resturant! This recipe makes a TON but they do freeze well and the batter can stay in the fridge for a month.

Ingredients

1 box
15oz box of raisin bran cereal
3 c
sugar
5 c
all purpose flour
5 tsp
baking soda
2 tsp
salt
4
eggs
1 c
vegetable oil
1 qt
buttermilk
2 tsp
vanilla
1 tsp
ground cinnamon
1 tsp
groud cloves
1 tsp
ground nutmeg

Directions Step-By-Step

Preheat oven to 400 degrees. Mix dry ingredients in large bowl and then stir in remaining ingredients. Mix well. Fill MINI muffin tins 2/3 full and bake for 15 minutes.

The batter will last about a month in the refrigerator.

I'm sure they could be made in large muffin tins, but I've never tried.
