Cranberry-nut brunch muffins

I'll be making these this morning w/ the left-over cranberries I have. They are very delicious!

Ingredients

1-1/4 c
plus 2 tbsp light brown sugar
1/2 c
chopped walnuts
2 c
all purpose flour
1 c
whole wheat flour
4 tsp
baking powder
1-1/3 c
1% milk
2 large
eggs
1 stick
butter, softened
1-1/2 c
chopped, fresh cranberries
1 tsp
orange zest

Directions Step-By-Step

Heat oven to 400. Lightly spray 12 muffin cups w/ cooking spray. In small bowl, combine 2 tbsp brown sugar and walnuts.

In lg bowl, combine flours, remaining brown sugar and baking powder. In another bowl, whisk together eggs and milk. Add egg mix to flour mix. Add butter and stir until just combined.

Fold in cranberries and orange zest. Pour mix into muffin cups, 2/3 full. Sprinkle w/ walnut mix. Bake 20 mins, or until a toothpick inserted in center comes out clean.
