Country Style Blueberry Muffins
with different trials of various recipes...i finally came up with my own blueberry muffin recipe with a counry style taste...hope you enjoy...you can substitute chocolate chips or fresh raspberries if you like.
- 2 1/2 c
- all purpose flour
- 2 tsp
- baking powder
- 1\2 tsp
- baking soda
- 1\4 tsp
- 3\4 -1 c
- granulated sugar
- 1 c
- 1\2 c
- vegetable oil or melted butter
- 1 tsp
- 1 c
- fresh blueberries
1Preheat oven to 350 degrees farenheit .in a large bowl add flour, baking powder, baking soda and salt..you can sift together or using a spoon mix to incorporate...set aside
2In another bowl ,using a whisk.whisk egg with the sugar(if you dont want your muffins too sweet , use 34 cup of sugar and if you want it a little sweeter use the 1 cup...when i made these i used 34 cup)then add in buttermilk,vanilla and oil(or melted butter)
3If you like you can add 1 tsp of lemon zest if you like.make a well in dry ingredients then pour in wet mixture.using a wooden spoon mix to combine , then add in blueberries..just till moistened.
prepare muffin tin with paper liners(12) or you can just spray cooking spray..scoop batter evenly in cups...bake 25-35 min till they turn a little golden brown...my oven took 35 min to bake..keep your eye on them and enjoy!!
