Just had to have the taste of some coconut...and had plenty of ripe banana's on hand. And used my Almond flour mix.

Ingredients For coconut banana almond muffins
-
1 1/2 calmond flour -i use mama's almond blend.
-
1/2 ccoconut, flakes -i used the sweet, and may be little more.

1/2 csugar

1 1/2 tspbaking powder

1/2 tspbaking soda
-
1/2 csilvered almonds ,chopped fine
-
2 lgeggs
-
1 cmashed bananas apx 3 bananas
-
1/2 tspalmond extract
-
1/4-1/2 cgrape oil or your choice of oil
-
3/4 tspguar gum -if not using flour with it already in it.
How To Make coconut banana almond muffins

1In a large bowl, add eggs mix some add your sugar,and oil. and beat until thoroughly blended. then add the mashed bananas and almond extract.

2In another bowl put all your dry ingredients,mix well. Now you put your wet ingredients into the dry, and mix well. sometimes I add a handful of dried cranberries for a little crunch .

3Put in your oiled muffin pan, I use silicone muffin cups. Bake for apx 30 minutes at 350F, test with tooth-pick if comes out clean there cone.

4I sprinkled a little coconut on the top of my muffins before putting them in the oven. YUM-O ..
