    whole wheat pastry flour
  • 1 Tbsp
    milled flax seed
  • 1 1/2 tsp
    pumpkin pie spice
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • dash
    salt
  • 1/2 c
    + 2 tablespoons sugar, divided
  • 1/2 c
    pumpkin puree
  • 1 tsp
    pure vanilla extract
  • 1/2 c
    egg substitute
  • 1 c
    reduced fat buttermilk
  • 1 Tbsp
    cinnamon

How To Make cinnamon swirl pumpkin muffins

    Preheat oven to 350. Line 12 muffin tins, then spray lightly with nonstick spray. In a medium bowl, whisk together the flour, flax seed, pumpkin pie spice, baking powder, baking soda, and salt.

    In a large bowl, beat 1/2 cup sugar and pumpkin puree, vanilla extract and egg substitute until well-combined. Alternate adding dry ingredients/buttermilk to wet ingredients (flour mixture, buttermilk, flour, buttermilk, flour).

    Fill muffin tins 1/3. In a small bowl, whisk remaining 2 tbsp sugar with cinnamon. Sprinkle cinnamon sugar evenly over the top of the batter. Top with remaining batter. Bake for 20 minutes, until toothpick inserted in the center comes out mostly clean. Let stand for 2-3 minutes, then transfer to wire racks to cool completely. Store in an airtight container.
