chocolate chip coffee muffins

2/3 c2% milk (fat free will work just as well)

5 Tbspbutter, melted

3 Tbspinstant coffee granules

1 1/2 tspvanilla extract

1 lgegg, lightly beaten

9 ozall-purpose flour or whole wheat pastry flour (about 2 cups)

1/2 tspground cinnamon otr to taste

2/3 csugar or splenda

1/2 cmini bittersweet chocolate chips ( you can use up to 1 cup if you want)

2 tspbaking powder
-
1/4 tspsalt

How To Make chocolate chip coffee muffins

1Preheat oven to 375°. Combine first 6 ingredients.

2Lightly spoon flour into dry measuring cup level with a knife. Combine flour and next 4 ingredients (through salt) in a large bowl; stir well with a whisk. Make a well in center of flour mixture and add milk mixture to flour mixture, stir just until moist.

3Spoon batter into 12 muffin cups coated with cooking spray. Bake for 15 minutes or until done. Remove muffins from pan immediately; place on a wire rack.
