A cross between carrot cake and oatmeal cookies. An easy way to get my kids to eat their veggies.

Ingredients For carrot oatmeal muffins

  • 1 1/3 c
    all purpose flour
  • 1 c
    oats (quick cooking is ok but old fashioned gives you more texture)
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/2 c
    brown sugar
  • 3/4 c
    carrots, finely shredded
  • 1/2 c
    raisins
  • 1/2 c
    milk
  • 1
    egg, beaten
  • 1/3 c
    butter, melted
  • 1 tsp
    vanilla extract

How To Make carrot oatmeal muffins

    Spray a 12 cup muffin tin with cooking spray. Preheat oven 375 degrees.

    Combine flour and oats in large bowl.

    Sprinkle with baking powder, baking soda and cinnamon. Mix.

    Stir in brown sugar.

    Add carrots and raisins, mix.

    In seperate bowl milk, egg, butter and vanilla. Stir.

    Add milk mixture to flour mixture and mix thoroughly.

    Fill each muffin cup 3/4 of the way full.

    Bake at 375 degrees for 20 - 25 minutes. Cool 10 minutes then remove from muffin tin.
