Ingredients
| FOR THE MUFFINS | |
| 2 1/2 c | all purpose flour |
| 2 c | white sugar |
| 1 Tbsp | cinnamon or pumpkin pie spice |
| 1 tsp | baking soda |
| 1/2 tsp | salt |
| 2 lg | eggs |
| 1 tsp | vanilla extract |
| 1 c | pumpkin puree |
| 1/2 c | vegetable oil |
| 2 c | finely chopped or grated apple (peeled) |
| FOR THE STREUSEL TOPPING | |
| 1/4 c | brown sugar, firmly packed |
| 2 Tbsp | all purpose flour |
| 1/2 tsp | cinnamon |
| 4 Tbsp | cold butter cut up |

Directions
Mix the dry ingredients together and set aside. Combine the eggs, vanilla, pumpkin, vegetable oil and chopped apple until well mixed. Gradually add the dry ingredients until well combined but don't overmix.Divide batter between 18 muffin tins lined with muffin papers or VERY well greased.For the topping, work all ingredients together until it forms a coarse meal texture. Sprinkle a teaspoon or two over each muffin until it is all used up.Bake at 350 degrees for 25 to 30 minutes.
