Ingredients

FOR THE MUFFINS
2 1/2 c all purpose flour
2 c white sugar
1 Tbsp cinnamon or pumpkin pie spice
1 tsp baking soda
1/2 tsp salt
2 lg eggs
1 tsp vanilla extract
1 c pumpkin puree
1/2 c vegetable oil
2 c finely chopped or grated apple (peeled)
FOR THE STREUSEL TOPPING
1/4 c brown sugar, firmly packed
2 Tbsp all purpose flour
1/2 tsp cinnamon
4 Tbsp cold butter cut up

Laurie's Notes:

My sister, Carolyn, gave me this recipe. She is all about any muffin that has a streusel topping. These muffins are moist and delicious!

 

Directions

Mix the dry ingredients together and set aside. Combine the eggs, vanilla, pumpkin, vegetable oil and chopped apple until well mixed. Gradually add the dry ingredients until well combined but don't overmix.

Divide batter between 18 muffin tins lined with muffin papers or VERY well greased.

For the topping, work all ingredients together until it forms a coarse meal texture. Sprinkle a teaspoon or two over each muffin until it is all used up.

Bake at 350 degrees for 25 to 30 minutes.

Thank you for the post Laurie I really do appreciate it. Love muffins and this sounds very rich and moist and I can convert some of the ingredients for my diet. Lots of fiber in this recipe too. Thank you for sharing

Ooooh, these sound wonderful. I love a good dessert muffin. This recipe sounds a bit similar to the morning glory muffins I make and they are to die for. Pinched!:)

Thanks ladies! They are good muffins. The soup is just beef stew and I don't really use a recipe when I make it. Next time you do a pot roast, save the juices and freeze them, they make the best stew base EVER!
