Ingredients For cappucino muffins

  • 2 c
    sifted all purpose flour
  • 1 Tbsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 c
    unsweetened cocoa powder
  • 2 Tbsp
    darkly roasted ground coffee (i use arabica or columbian roasts)
  • 1/2 tsp
    salt
  • 1/2 c
    semi sweet chocolate chips
  • 1 c
    finely chopped hazelnuts or almonds
  • 1 tsp
    orange zest, minced
  • 1/2 c
    butter, softened
  • 1/2 c
    sugar
  • 1 c
    sour cream
  • 3/4 c
    whole milk
  • 2
    eggs
  • 1/4 c
    espresso, or 2x strength brewed coffee, cooled (directions below)
  • paper muffin cup liners
  • SWEET FROTHY TOPPING:
  • 1/2 stick
    butter
  • 2 c
    powdered sugar
  • 1 tsp
    vanilla
  • 2 Tbsp
    milk
  • FOR EXTRA STRENGTH COFFEE:
  • BREW COFFEE AT A RATIO OF ONE CUP COFFEE GROUNDS TO 16 OZ WATER

How To Make cappucino muffins

  • 1
    Preheat oven to 375 F. Sift flour and mix with the dry ingredients including cocoa, chocolate chips, and orange zest. Set aside.

    Mix together the butter, sugars, sour cream, milk, eggs and coffee. Fold into dry ingredients, just until moistened and smooth. Be careful not to overmix. Place liners in 12 muffin cups and bake approximately 20-25 minutes.

    TOPPING: Whip the butter. Add sugar, vanilla and milk. Mix together until well blended into a smooth icing. Smooth glaze over the top of cooled muffins.
