I received this recipe from my husbands aunt in the 80's. It's still a keeper.

Ingredients For bran muffins

  • 1 c
    boiling water
  • 2 c
    kelloggs all bran cereal
  • 1 c
    nabisco 100% bran cereal
  • 1 1/2 c
    granulated sugar
  • 1/2 c
    vegetable oil
  • 2 c
    buttermilk
  • 2
    eggs
  • 2 1/2 c
    flour
  • 2 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    raisins

How To Make bran muffins

    In small bowl, combine cereals. Pour boiling water over cereals and set aside.

    Blend sugar and oil together with electric mixer. Add buttermilk and eggs.

    Sift flour, salt and baking powder together. Gradually add to sugar mixture.

    Fold in cereal mixture and raisins.

    Pour mixture into sprayed muffin tins and bake at 400 degrees for 15 minutes.

    BATTER KEEPS IN REFRIGERATOR FOR DAYS. DO NOT STIR AGAIN! Simply dip out what you need and bake. The chilled batter will have to bake for a bit longer. I bake until the top springs back.
