Blueberry-Oat Streusel Muffins

Ingredients

2 c
all purpose flour
2 tsp
baking powder
1/4 tsp
baking soda
1/4 tsp
salt
3/4 c
white sugar
2 tsp
grated lemon rind
1 1/2 c
fresh or frozen blueberries
3/4 c
buttermilk
1/4 c
vegetable oil
1 large
egg

STREUSEL

1/3 c
uncooked regular oats
3 Tbsp
light brown sugar
1 Tbsp
low-calorie margarine
2 Tbsp
almonds, slivered

Directions Step-By-Step

Combine dry muffin ingredients in large bowl; add blueberries & toss gently. Set aside.

Combine together: buttermilk, oil, and slightly beaten egg; add to dry ingredients, stirring until dry ingredients are moistened. Note: dough will be stiff.

Spoon batter into muffin tins coated with cooking spray. (I line muffin tins with paper cupcake holders) Fill 2/3 full.
Toss together streusel ingredients (margarine should be room temperature or can be melted first) Sprinkle evenly on top of muffin mixture prior to baking.
Bake at 400 degrees for 15-20 minutes.
