Everyone likes a recipe that is fast and easy to make but tastes ever so good. Add any fruit to these muffins. Raspberries, Blackberries, Mulberries, Eldaberries, Blueberries, Cranberries or get creative. Replace some of the flour with an equal amount of cocoa powder for chocolate muffins. (1/4 c)
Melt Butter in microwave and set aside. Mix all dry ingredients together. Mix milk, vanilla and eggs with a whip just until the eggs are blended into the milk well. Add wet mixture to dry mixture and stir with wooden spoon until blended. Add Fruit of your choice. Bake at 350 degrees for 26 minutes in lined or greased muffin tin.
Divide batter between the 12 muffin cups into a lined or greased muffin tin. Bake at 350 degrees for 26 minutes.
