best ever muffins

This is out of my old recipe box. I do not know where I got this one, probably from my sister. When I want to make just a simple muffin, this is the one. You can also fancy it up. Blue recipe box

Ingredients For best ever muffins

  • 1 3/4 c
    flour
  • 1/4 c
    sugar
  • 2 1/2 tsp
    baking powder
  • 3/4 tsp
    salt
  • 1 1/4
    egg, well beaten
  • 3/4 c
    milk
  • 1/3 c
    cooking oil
  • 3/4 to 1 c
    blueberries or huckleberries
  • 1 tsp
    grated lemon peal
  • 2 Tbsp
    sugar
  • melted butter and sugar for topping

    Oven: 400 degrees Stir together the flour, sugar,baking powder and salt with a wire whip.

    Make a well in center. In another bowl, combine egg, milk and oil. Add all at once to dry mixture. Stir just till moistened. Fill well greased muffin pan 2/3 full. Bake for 20 to 25 minutes. Blueberry/huckleberry & lemon muffins: Prepare muffins as above, except combine berries, sugar. Fold into batter along with grated lemon peal. Bake as directed. While warm, dip in melted butter and then sugar. I usually double this and make more muffins. I use these extra for bread pudding or freeze 1/2 for use later.
