Best Ever Muffins
When I want to make just a simple muffin, this is the one.
You can also fancy it up.

- 1 3/4 c
- 1/4 c
- 2 1/2 tsp
- baking powder
- 3/4 tsp
- 1 1/4
- egg, well beaten
- 3/4 c
- 1/3 c
- cooking oil
- 3/4 to 1 c
- blueberries or huckleberries
- 1 tsp
- grated lemon peal
- 2 Tbsp
- melted butter and sugar for topping
Stir together the flour, sugar,baking powder and salt with a wire whip.
In another bowl, combine egg, milk and oil.
Add all at once to dry mixture.
Stir just till moistened.
Fill well greased muffin pan 2/3 full.
Bake for 20 to 25 minutes.
Blueberry/huckleberry & lemon muffins:
Prepare muffins as above, except combine berries, sugar.
Fold into batter along with grated lemon peal.
Bake as directed.
While warm, dip in melted butter and then sugar.
I usually double this and make more muffins.
I use these extra for bread pudding or freeze 1/2 for use later.
