This tempting recipe will get you to eat whole grains and I love the bananas in these and the nuts- just enough to help you keep on your diet- who am I kidding- I'll eat more than one of these!

Ingredients For banana oatmeal muffin tops

  • 1 1/2 c
    quick oatmeal, uncooked
  • 1/4 c
    brown sugar,packed
  • 1/4 c
    granulated sugar
  • 1/3 c
    melted butter or margarine
  • 1 1/2 c
    all purpose flour
  • 1 Tbsp
    baking powder
  • 1/4 tsp
    each of ground ginger, and cinnamon
  • 1 dash
    nutmeg
  • 1 lg
    egg, slightly beaten
  • 1/4 c
    sour milk or evaporated milk
  • 1 c
    mashed very ripe bananas
  • 1 tsp
    vanilla extract
  • 1/2 c
    chopped walnuts

How To Make banana oatmeal muffin tops

    Heat oven to 425^. Lightly grease a large cookie sheet.Set aside. In a large bowl combine flour, baking powder oatmeal,sugars , and spices ; mix well. Combine milk,melted butter and egg in a small bowl and mix well then add to the dry ingredients; mix just until dry ingredients are moistene. Stir in vanilla, bananas and nuts until incorporated , but gently. For each muffin top, drop batter by 4 Tablespoons for each top, onto prepared cookie sheet. Bake 13-15 minutes or until golden brown. These freeze well.
