Banana/Nut/raisin whole wheat muffins

this is a recipe i have had for a while that I just replaced the eggs with egg replacer to make it vegan. So if you wish use 2 medium to large eggs in it. this is a favorite breakfast of ours when we are having a rushed morning. Awesome breakfast with just a cup of coffee or soy milk.

Ingredients

1/3 c
oil
1/2 c
honey or agave syrup
egg replacer equivalent to (2 large eggs)
1 tsp
pure vanilla extract
2
mashed ripe bananas
1 3/4 c
whole wheat flour
1/2 tsp
salt
1/4 tsp
cinnamon
1 tsp
baking soda
1/4 c
very hot water
1/4 c
pecans or walnuts
1/4 c
raisins or crasins
cooking spray

Step-By-Step

1Preheat oven to 400 degrees

2Mix honey, oil, eggs, vanilla, mashed bananas, nuts, raisins, cinnamon and salt in a bowl. Mix well

3Blend in the whole wheat flour and mix well, so there is no dry flour seen

4Add baking soda to 1/4-C of boiling water in a small container

5Pour baking soda over the flour mixture and stir until fully incorporated.

6Spray muffin tin (12) with baking spray and spoon in mixture

7Bake for about 18-20 minutes, check with cake tester to ensure center is done.
