Applesauce Brunch Muffins

butter or margarine, softened
2 c
granulated sugar
2 large
1 tsp
pure vanilla extract
4 c
all-purpose flour
1 tsp
(each): cloves, allspice, nutmeg and cinnamon
2 tsp
baking soda
1 large
can applesauce (not with cinnamon)
1 c
pecans or walnuts, chopped


1Preheat oven to 350 degrees. Grease muffin tins. In a large mixing bowl, cream together the butter, sugar, eggs and vanilla. Sift together the flour, spices and soda. Add to mixture, alternating with applesauce. Stir in nuts. Pour into muffin cups, filling 2/3 way full. Bake for 12 to 15 minutes, or until golden brown. Cool.
