  • 3 c
    white whole wheat flour
  • 1 tsp
    cinnamon
  • 1/2 tsp
    ground nutmeg
  • 3 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/8 tsp
    baking soda
  • 1/2 c
    almond milk (or regular)
  • 1/2 c
    packed dark brown sugar
  • 1/4 c
    sugar
  • 1/2 c
    greek yogurt
  • 1/2 c
    unsweetened applesauce
  • 2 lg
    eggs
  • 1 tsp
    pure vanilla extract
  • 2 c
    chopped apple
  • FOR THE OATMEAL STREUSEL TOPPING
  • 1/4 c
    dark brown sugar
  • 2 Tbsp
    all-purpose flour
  • 2 Tbsp
    old-fashioned rolled oats
  • 1/2 tsp
    ground cinnamon
  • 2 Tbsp
    unsalted butter

How To Make apple muffins with oatmeal topping

    Preheat oven to 425 degrees F. Grease or line muffin tins. In a medium bowl, combine the flour, cinnamon, nutmeg, baking powder, baking soda and salt. In a large bowl, whisk together the milk, sugars, yogurt, applesauce, eggs and vanilla until well combined. Stir in the dry ingredients and mix until just combined. Do not over-mix the batter. Fold in the chopped apples.

    Divide batter into prepared muffin tins, making sure you fill each to the top. Make the streusel topping by mixing all the ingredients in a small bowl until it resembles coarse meal. Sprinkle over each muffin.

    Bake muffins at 425 for 5 minutes. Reduce temperature immediately to 375 degrees F and continue baking for 15-18 minutes or until a cake tester inserted in the middle comes out clean. Cool muffins on cooling racks.
