APPLE MUFFINS with Whole Wheat Blend

Did you ever buy something by mistake? The pancake mix I purchased is the brand I prefer, but I picked up the WHOLE WHEAT BLEND BY MISTAKE...Well, my hubby won't try new things, but I DO!

This morning I was cravin a hot muffin with my coffee. Since I like to bake - even before I start other things, "I whipped out the mix, the flour and whatever else grabbed me!"

1 c
aunt jemima whole wheat blend pancake mix
1 c
all-purpose flour
1/3 c
light brown sugar (adjust to suit your taste)
2 tsp
baking powder
1 c
1/3 c
safflower oil (picture shows wrong oil used)
1 large
fresh egg
1 tsp
vanilla extract
small individual container of applesauce
apple, cored,peeled and chopped
1 tsp
2 Tbsp
good granola, approx. for sprinkling on tops of muffins before baking

1Place muffins cups in a muffin pan (12 medium) and preheat oven to 400 degrees.

2Measure all dry ingredients and place in large mixing bowl.

3Add all liquid ingredients and mix slowly at first, then blend in well.

4Spoon batter into muffin cups and sprinkle granola on top of each.

5Bake in middle of oven for 17-18 mins. checking to be sure they are golden brown and dry to the touch.
