okra, fresh sliced into 1/4" coins
buttermilk or more if needed
OKRA CORNBREAD HOECAKES
1Measure dry ingredients and stir with whisk.
2Mix slightly beaten egg, buttermilk,and canola oil together.
3Combine dry and wet ingredients with okra and stir with a spoon to mix well. Let sit for 2 or 3 minutes. Drop by spoonfuls into a hot greased skillet and cook until golden brown. Flip over and away from you. Brown hoecakes on both sides. Serve while warm and enjoy.

It is truly a summer and southern thing but everyone that ate them adored the okra addition. My family are okra fans thus, we loved them with fish, veggies, and/or soups or stews.

Melanie I hope you enjoy these warm and friendly southern hoecakes! My family loves it when I make them. As a matter of fact I have plenty on hand since they are coming in daily from our garden. I will make these again tonight to eat with our stew. Thanks for posting and happy cooking!
