|8 medium||okra, fresh sliced into 1/4" coins|
|1 c||cornmeal, white|
|1/2 c||yellow cornmeal|
|3/4 c||buttermilk or more if needed|
|1/4 c||canola oil|
|OKRA CORNBREAD HOECAKES|
Measure dry ingredients and stir with whisk.
Mix slightly beaten egg, buttermilk,and canola oil together.
Combine dry and wet ingredients with okra and stir with a spoon to mix well. Let sit for 2 or 3 minutes. Drop by spoonfuls into a hot greased skillet and cook until golden brown. Flip over and away from you. Brown hoecakes on both sides. Serve while warm and enjoy.
