| 8 medium | okra, fresh sliced into 1/4" coins |
| 1 c | cornmeal, white |
| 1/2 c | yellow cornmeal |
| 1 medium | egg |
| 3/4 c | buttermilk or more if needed |
| 1/4 c | canola oil |

Directions
Measure dry ingredients and stir with whisk.Mix slightly beaten egg, buttermilk,and canola oil together.Combine dry and wet ingredients with okra and stir with a spoon to mix well. Let sit for 2 or 3 minutes. Drop by spoonfuls into a hot greased skillet and cook until golden brown. Flip over and away from you. Brown hoecakes on both sides. Serve while warm and enjoy.
