okra, fresh sliced into 1/4" coins
buttermilk or more if needed
OKRA CORNBREAD HOECAKES
1Measure dry ingredients and stir with whisk.
2Mix slightly beaten egg, buttermilk,and canola oil together.
3Combine dry and wet ingredients with okra and stir with a spoon to mix well. Let sit for 2 or 3 minutes. Drop by spoonfuls into a hot greased skillet and cook until golden brown. Flip over and away from you. Brown hoecakes on both sides. Serve while warm and enjoy.
