Make sure you use buttermilk & not just milk with vinegar. It gives it a much better fluffy consistency.
My celiac husband loves these much better than the already made frozen ones you buy!

Ingredients

1 1/4 c
white rice flour
2 tsp
baking powder
1 tsp
soda
1/2 tsp
salt
1 1/4 c
buttermilk ( no substitutions)
1/4 c
veg oil
2
eggs
1/2 tsp
vanilla

Directions Step-By-Step

add oil to the buttermilk~stir. In large bowl, mix dry ingredients. Add btrmlk/oil mixture & eggs. Stir up well~ & cook!
