These are smaller softer flat bread that can be used any way you wish. Try fold over sandwiches, soup or stew accompaniment for example. They are also gluten free as well as diabetic. Cooking time will depend on how many you can do at one time without crowing them on your griddle or skillet.

Ingredients For chickpea flour flat breads, diabetic

  • 2 c
    chickpea flour
  • 1 tsp
    splenda sugar substitute
  • 1 tsp
    salt or to your taste
  • 1 3/4 c
    hot water
  • 1 Tbsp
    canola oil
  • ground black pepper to taste
  • 1 pinch
    of ground nutmeg

How To Make chickpea flour flat breads, diabetic

    Mix all ingredients. The batter should have the consistency of pancake batter.

    Let rest for 5 – 15 minutes.

    Heat a small non stick frying pan. Add just a few drops of oil.

    Add ½ cup batter and cook until the bottom starts to bubble and brown.

    Flip and cook the other side.
