These are smaller softer flat bread that can be used any way you wish. Try fold over sandwiches, soup or stew accompaniment for example. They are also gluten free as well as diabetic. Cooking time will depend on how many you can do at one time without crowing them on your griddle or skillet.

1 tspsplenda sugar substitute

1 tspsalt or to your taste

1 3/4 chot water

1 Tbspcanola oil

ground black pepper to taste

1 pinchof ground nutmeg
How To Make chickpea flour flat breads, diabetic

1Mix all ingredients. The batter should have the consistency of pancake batter.

2Let rest for 5 – 15 minutes.

3Heat a small non stick frying pan. Add just a few drops of oil.

4Add ½ cup batter and cook until the bottom starts to bubble and brown.

5Flip and cook the other side.
