Raisin Chocolate Chip Zucchini Bread

Boiling the raisins is a MyMom'sMom secret~it makes the raisins better in baking. I didn't know her but she was 100% Finnish.
In all my baking recipes I boil the raisins for a few minutes. Seems to keep their flavor and plumps them.

Ingredients

eggs
1 c
cooking oil
1 tsp
soda
1/2 tsp
salt
1/4 Tbsp
baking powder
2 c
sugar
1 Tbsp
vanilla
3 c
shredded peeled zuccini
2 1/2 c
flour
1 tsp
cinnamon
1 c
chocolate chip
1 c
boiled rasins

Directions Step-By-Step

Take eggs, oil, sugar and mix well. Add the small dry ingredients and vanilla and mix well. Add shredded Zucchini and mix well.

Boil 1 cup of raisins covered in water in a pan. Place on stove top~boil them for a few minutes. Drain them add them to mix. Add 1 cup of Chocolate Chips. Add flour and mix well.

Grease 2 loaf pans or spray them~split in 2 pans. Bake at 350 ~for 50-60 minutes.
Make sure to grease the bottoms really well or use wax paper.
